Atsuage: The Hearty "Deep-Fried Tofu" That’s a Staple in Japanese Homes
This was my lunch today: Atsuage.
You might have seen thin, pouch-like fried tofu called Abura-age. While they look similar, Atsuage is different. Unlike the thin version which is fried all the way through, Atsuage is a thick block of tofu that is deep-fried only on the outside.
Because the inside remains soft and white, it has the hearty volume and satisfying texture of fresh tofu, combined with the savory flavor of the fried golden skin.
Both thin fried tofu and Atsuage have been loved in Japan for centuries. They are simple, affordable, and incredibly reliable ingredients for an ordinary guy like me.
For this dish, I simply grilled the surface until crispy and topped it with:
Grated ginger
Chopped green onions
Bonito flakes (Katsuobushi)
A splash of soy sauce
In terms of simplicity, I'd say it's on the same level as French fries. It’s a very basic yet delicious way to enjoy tofu. If you ever have the chance to try it, please do!
