Freeze-Dried Magic: Delicious Tonjiru (Pork Soup) Ready in Seconds

For lunch today, I had a bowl of Freeze-Dried Tonjiru (pork and vegetable miso soup).

​It’s incredible—you just pour hot water over a small, solid block, and a delicious soup is ready instantly! Even though it starts out hard and dry, the texture of the ingredients and the rich flavor of the miso remain perfectly intact.

​Japan’s freeze-drying technology has a fascinating history. It began in the 1970s with toppings for cup noodles, but it has since evolved to include miso soup, various other soups, and even curry. These products are easy to prepare, have a long shelf life, and most importantly, they taste great.

​This technological advancement is driven not only by the craftsmanship of Japanese researchers but also by Japan’s reality as a nation prone to natural disasters. There is a strong social need for emergency food that is not just nutritious, but also truly delicious.


​My lunch today was quite simple: this Tonjiru, a bowl of white rice, and a side dish of simmered Chinese cabbage with fried tofu (Age).

​It was another satisfying meal. You can find a huge variety of freeze-dried products in any Japanese supermarket, so I highly recommend picking some up to try!
